Double-Click the AntiVirus shield icon in the lower right corner of your screen (alternately, go to "Start", "All Programs", "Symantec Client Security", "Symantec AntiVirus"):

Go to the "File" menu and select "Schedule Updates":

Put a check into "Enable scheduled automatic updates". If the default time looks okay to you, just click "OK" and you’re done.

If you’d like to change the time, click "Schedule":

Select the frequency of updates, and exactly which day and time they will run, then click "OK" when you’re done.
